Popeye was right; spinach is good for you!!! In fact, spinach is high in many nutrients, including several carotenoids, folate, calcium and iron. Add a little salad dressing and you're getting a healthy dose of vitamin E (from the oil) to round out your intake of antioxidants. It all adds up to getting nutrients that nourish your whole body, as well as your eyes.

If you would prefer to cut down on fat and calories, purchase a lowfat, low calorie sweet and sour type dressing to substitute for the dressing recipe below.

2 lb. Fresh spinach
1 can Bean sprouts, drained
1 can Water chestnuts, drained, sliced or chopped
4 Hard boiled eggs (remove and discard the yolk from 3 of the eggs)
1 bunch Green onions, chopped
3 oz. Turkey bacon

Wash, dry and tear spinach in large bite size pieces. Drain bean sprouts and water chestnuts. Chop egg whites from 3 hardboiled eggs. Slice remaining hardboiled egg and save to garnish top of salad after final tossing. Chop and add green onions. Cook turkey bacon according to package instructions until it is crisp. Crumble it and add to salad. Toss salad with approximately 1 cup of dressing. Garnish top with reserved egg slices. Serves 10 - 12.

Dressing:
1 cup Canola oil
1/3 cup Sugar
1/2 cup Vinegar
1/3 cup Catsup
1 tsp. Salt
1 Tbsp. Worcestershire sauce

Mix all ingredients. Add 1/2 of dressing to salad, approximately 1 cup. Save remaining dressing for future use.
