Delicious fresh tomatoes are abundant this time of year, and it is always helpful to have a new way to serve them. How about a delicious baked tomato? This very fast and easy recipe is a great way to highlight fresh tomatoes as one of the vegetables at your next meal.
4 fresh tomatoes (medium to large)
1 Tbsp. olive oil
1 clove garlic, minced
1/2 cup fresh bread crumbs
2 Tbsp. parsley
1 Tbsp. basil
2 Tbsp. Parmesan cheese
1/8 tsp. black pepper
Preheat oven to 375 degrees. Wash and slice tomatoes in half. Put tomatoes cut side up in baking dish. In a skillet, saute garlic in olive oil for 1 - 2 minutes; do not brown. Remove skillet from heat and stir in breadcrumbs, Parmesan cheese, parsley, basil and pepper. Sprinkle mixture on top of tomatoes. Bake in oven for 15 minutes. Serves 8.
