Crab Canopies

Not all appetizers are created equal! At least in the sense of nutritional value, this is certainly true because many tend to be high in fat. This crab appetizer is very tasty and has a moderate fat content. It is not as low in fat as some, such as Robin's Zesty Salsa. But these crab canopies have elegance of flavor without being as high in fat and calories as many similar tasting hors d'oeuvres. Remember, the key is to enjoy a reasonable amount which doesn't make the fat and calories an issue.

8 ounces Low-fat cream cheese or Neufchatel cheese
3 Tbsp. Light mayonnaise
2 - 3 tsp. Dijon mustard
2 large cloves Garlic, crushed
6 ounces Crab meat - frozen (precooked) or canned
1/4 cup. Parsley, chopped
1 baguette French bread (a long narrow loaf - about 2 1/2" diameter

Set parsley aside. Mix all other ingredients and refrigerate until ready to serve. Cut one baguette of French bread into approximately 48 slices. Put the bread slices on a cookie sheet and toast in oven at 375 degrees for about 10 minutes or until golden brown. Spread a spoonful of mixture on each bread slice. Garnish tops with fresh parsley flakes and serve
