Carrots with Orange Glaze

Carrots are sweet, but these are even sweeter. Enjoy this interesting flavor twist for carrots. It's an easy way to get a high beta carotene vegetable on your plate.

6 to 8 fresh carrots
1 Tbs. olive oil
2 Tbs. water
3 Tbs. sugar
1 Tbs. flour
3/4 cup orange juice
orange slices for garnish

Peel carrots. Cut into strips lengthwise. Cook, covered, in boiling water until tender. Drain and transfer carrots to shallow baking dish. In a small saucepan, stir olive oil and water together. In a separate small container, mix sugar and flour. Gradually stir flour/sugar mixture into olive oil/water mixture. Put saucepan on low to medium heat, gradually stir in orange juice. Cook, stirring constantly, until mixture bubbles or slightly thickens. Pour glaze evenly over carrots. Garnish with twisted halves of orange slices. Bake at 350° for 15 minutes. 6 Servings
