Chocolate Pudding Cracker Cake

Here is a low fat dessert, but not one that is necessarily low in sugar or calories. But it is hard to have it all in a dessert, and this one is better than most. For the healthiest of desserts, choose fruit! But every now and then, you may want to satisfy your sweet tooth and here is a very easy, no cook way to do it. Use nonfat frozen whipped topping and decrease the fat and calorie content even more. This recipe is easy enough for kids to make; they will be proud of their cooking skills and most of all they will love eating it.

45 graham cracker squares (2 1/2" squares)
1 box instant chocolate pudding
1 box instant vanilla pudding
3 1/2 cups skim milk
4 cups frozen lite whipped topping (such as Cool Whip), thawed
1 cup frozen lite whipped topping (optional)

In separate bowls, mix each of the pudding mixes with 1 3/4 cups skim milk. Beat by hand for a few minutes until completely mixed. Fold in about 2 cups of frozen whipped topping into each pudding mixture. In a 9" X 13" pan, layer 15 graham cracker squares on bottom. Cover with 1/2 of the chocolate mixture. Repeat graham cracker layer. Cover with all of vanilla mixture. Repeat graham cracker layer. Cover top with the rest of chocolate pudding mixture. Chill for 3-4 hours. If desired garnish top with a layer of frozen whipped topping. Cut into 15 squares.
