Light Garlic Mashed Potatoes

Avoid adding fat and give your mashed potatoes richness of flavor with the addition of a little fresh garlic. The crushed raw garlic clove is also a good source of allicin which has been shown to have health promoting properties.

5 small baking potatoes (about 1.5 lbs.)
3/4 cup buttermilk
1/4 cup skim milk
1 clove garlic, crushed
1/8 tsp. salt
pepper to taste

Peel potatoes, cut in half, put in a saucepan and cover with cold water. Bring to a boil and cook for approximately 20 minutes until very tender. Turn burner off, drain potatoes and put back on burner that is still warm to dry potatoes as much as possible. Mash potatoes with a fork, potato masher or beater, Stir in crushed garlic, buttermilk, and skim milk. Season with salt and pepper to taste. Reheat potatoes in a covered dish in oven or microwave before serving. Serves 5.
