A refreshing low-fat summer soup- Quick, easy and makes a great appetizer

1 cup light sour cream, lowfat plain yogurt, or nonfat plain yogurt 1 cucumber, peeled, sliced (English Cucumbers have no seeds) 1/4 tsp. dry mustard 1/2 tsp. instant chicken bouillon 1 Tbs. snipped chives or 1 green onion salt and pepper to taste

Put all ingredients into a blender and blend to finely chopped or smooth depending on preference. Chill. Serve cold with a garnish of dill, chives or a slice of cucumber. Makes two 1 cup servings or four 1/2 cup servings. Nutrient analysis: 1/4 of recipe (approx. 1/2 cup)
