Stovetop Zucchini & Vegetables

It's summertime and fresh vegetables are plentiful. Mix whatever vegetables you happen to have on hand, or whatever combination sounds particularly interesting to you. Add your favorite herbs or spices and you have a delicious, nutritious dish. You might want to try our combination below.

1 cup green pepper strips
1 cup sliced onion
1 1/2 lbs. zucchini sliced
3 tomatoes, chopped
3/4 tsp. basil
salt to taste (optional)

Saute onion and green pepper in a non-stick skillet, stirring frequently. Add zucchini, tomatoes and seasonings. Simmer until done. Serve with a little parmesan cheese sprinkled on top. Serves 6.
